We chose Ethiopia Karamo Sidama Chire for its exceptional balance of sweetness and structure, characteristic of the best chocolate-flavored coffees from Ethiopia. This coffee demonstrates how complex a wet process can be when carried out with attention to detail and complete control over fermentation. The result is a clean, velvety profile with pronounced notes of salted caramel, tangerine and cardamom.

Ethiopia Karamo Sidama Chire is a coffee produced by the Gemeda Mude family, owners of Karamo Coffee Export, based in the Sidama region of Ethiopia. The beans are grown at an altitude of 2,380 m, which ensures slow ripening and concentrated flavors. After careful hand-harvesting, the cherries are depulped and fermented with water for 36 hours, then dried on raised African beds until optimal humidity is reached. This method preserves the natural sweetness and expresses the region’s typical purity and balanced acidity. In the cup, subtle nuances of salted caramel and cardamom and mandarin are felt for freshness and a long, elegant aftertaste.
